I have learnt this kala chana recipe from my mother in law. Her recipes are always easy and made with basic ingredients. Ingredients of Black gram (kala chana) & green moong sprout kabab

  1. Prepare 1/2 cup of black gram.
  2. Prepare 1/ 2 cup of sprouted moong.
  3. You need 2 of boiled (peeled and mashed) potatoes.
  4. You need 1 cup of bread crumb.
  5. You need 1 small piece of chopped ginger.
  6. Prepare 1 small of chopped onion.
  7. You need 2-3 of green chillies.
  8. It's 1 of black cardamon.
  9. It's 2 of green cardamon.
  10. It's 1 of small piece cinnamon.
  11. It's 4 of cloves.
  12. You need 4-5 of black pepper corns.
  13. You need 1 tbsp of chopped coriander leaves.
  14. It's 5-6 cloves of garlic.
  15. You need as per taste of salt.
  16. It's 1 tsp of red chilli powder.
  17. Prepare 1 tsp of Cumin powder.
  18. Prepare 1 tsp of Chaat masala.
  19. It's 1 tsp of asafoetida.
  20. Prepare as needed of Oil for shallow frying.
  21. You need 1 tbsp of maida.
  22. Prepare 1 tbsp of cornflour.
  23. Prepare 4-5 tbsp of water.

Kala Chana is very high in protein and provides a nutritional meal. It has a low glycemic index and is a good protein option for people with Diabetes. Kala Chana is a variation of the commonly found chickpea but it is dark brown in color and smaller in size. It is also known as Bengal gram.

Black gram (kala chana) & green moong sprout kabab step by step

  1. Make sprout of moong by soaking overnight.
  2. There after drain the water.
  3. Tie in a cloth and hang in an airy place for 2 days.
  4. Soak black gram overnight.
  5. Boil black gram and sprouted moong (green gram) with 1 glass water in a pressure cooker along with Salt,both cardamom seeds,cinnamon,cloves, asafoetida garlic,ginger,black pepper corn for 3-4 whistles on medium heat.
  6. Let it cool, drain the water.
  7. Then grind it without any water.
  8. In a large mixing bowl take this paste.
  9. Add potatoes, half cup bread crumbs.
  10. Red chilli powder,coriander leaves, chaat masala and cumin powder.
  11. Mix well.
  12. Make patties and keep in a refrigirator for10-15 minutes.
  13. In a bowl make slurry with maida cornflour and water.
  14. Dip the patties in the slurry.
  15. Coat with remaining bread crumbs.
  16. Shallow fry in a non stick pan till brown in both sides.
  17. Enjoy with tea and any chutney.

How to Make Hari Moong and Kala Chana Sprouts. Sprouting is the process of germinating seeds, beans, and even whole cereals (such as wheat). You may boil the green gram and black gram sprouts, if you do not like them raw. But boil only till they are tender. Do not over boil as it will destroy.
