Moong Dal Vada. dal vada fritters are the most popular pakora recipe from western india especially from gujarat and rajasthan. however there are several other variations to this simple mung dal vada recipe. but the most common and popular recipe from rajasthan begins with soaking and grounding the batter into a thick paste. the batter has to be thick at the same time smooth paste, similar to any pakoda batter. Moong dal vada, simply the best and so addicting. These are golden crispy from outside and soft, spongy, fluffy from inside.
Ingredients of Moong Dal Vada
- Prepare 250 gm of Moong dal.
- It's 3-4 of green chillies.
- It's 1 inch of ginger.
- You need 1/4 tsp of asafoetida.
- Prepare 1 tsp of Fresh coriander leaves.
- It's 1 tsp of whole coriander seeds.
- You need 1 tsp of cumin seeds.
- It's As needed of water.
- You need As needed of salt.
- It's As needed of Oil for frying.
- Prepare 1/4 tsp of turmeric powder.

Moong Dal Vada step by step
- Rinse Moong dal 4-5 times & soak in water for 4-5 hrs. Then rinse again & remove the water..
- In a grinder mixer jar add Moong dal, green chillies, salt, ginger, asafoetida, whole coriander seeds & grind it well..
- Add chopped coriander leaves, aniseeds to the batter & mix it well. Add little water if required.
- Heat oil in a pan. Pour small portions of batter in medium hot oil to make vadas..
- Once it is fried from one side flip another side to fry it. After some time when it is done remove it from oil & fry another batch of vadas..
- Your hot crispy, tasty vadas are ready to be served. Serve hot with tomato sauce, green chutney or tamarind chutney..
