- It's 1 cup of Urad Dal (black gram lentils without skin).
- It's 1/2 tablespoon of crushed Ginger-Green Chilli, optional.
- It's of Oil, for deep frying,4 cups lukewarm Water,Salt to taste.
- You need of 3½ cups Curd (yogurt).
- It's of 3 tablespoons Powdered Sugar or to taste (optional),1 tablespoon.
- Prepare of 2 tablespoons Roasted Cumin Powder,1 tbs Black Pepper Powder.
- It's of 1/4 cup finely chopped Coriander Leaves.
- It's of 1/4 cup sweet date & tamarind chutney.

- Soak the urad dal overnight or for at least 4-5 hours. Drain them..
- Grind the urad dal, green chilies, ginger, cumin and asafoetida with little water to a smooth fluffy batter..
- Heat oil for deep frying. Either drop the batter with your hands or with a spoon in medium hot oil. Fry the vada in batches till crisp and golden..
- Drain the vada on paper towels..
- When they are still warm, add the vada in water and let them soak for 18-20 minutes..
- Press all the soaked vada this way and keep them aside in a plate.Pour the beaten curd. Pour the green chutney and sweet tamarind chutney.
- Sprinkle with red chili powder, roasted cumin powder, chaat masala and black salt..
- Garnish with coriander leaves,pomegranate & sev optional& then Serve dahi vada immediately or you can refrigerate and then serve them..
