Dahi Vadas are lentil dumplings topped with a spicy savory yogurt and tamarind chutney. These are great as a side dish for a formal dinner or served as a chaat. Dahi vadad are made using wash urad dal or moong dal or with a combination of both dals using different proportions of dal. Dahi Vada, Dahi Bhalla or Dahi Bara are fried lentil dumplings, topped with curd, variety of chutney and spices.

  2. Firstly, soak split black gram and split green gram in enough water for 3 hours. do not over soak urad dal as they absorb oil while deep frying..
  3. Further, drain off the water and transfer the spilt black gram and split green gram into the blender..
  4. Blend to smooth thick paste adding 2-3 tsp of water..
  5. For green paste.
  6. Add green chilli, coriander leaves, ginger and water in the blender. To make the paste..
  7. Transfer the batter into a large bowl the vada paste and the green paste and mix well..
  8. Beat the batter in one direction for 5 minutes to get more fluffy and smooth batter..
  9. Now add salt to taste, and mix lightly. do not rest long after adding salt, as it leaves water and makes batter watery..
  10. Now dip your hand in water, and start make lemon sized vadas..
  11. Drop them one by one to hot oil..
  12. Keep the flame in lower to medium stir occasionally..
  13. Also fry the vadas till they turn golden brown..
  14. Drain off the vadas on to kitchen towel to absorb oil..
  15. Immediately, drop the vadas into lukewarm water and dip the vadas completely..
  16. Soak for 5 minutes and allow the vadas to absorb water..
  17. Furthermore, squeeze off the water by pressing between your palm..
  18. Place 14 squeezed vadas on the deep bowl..
  19. Pour in the curd on top of the vada.
