Ingredients of Dahi Vada

  1. Prepare 250 g of urad dal / black gram.
  2. You need 1" of ginger crushed.
  3. Prepare 3-4 of green chillies chopped.

  6. Prepare as needed of Oil for deep frying.
  7. It's 4 cups of luke- warm water.

Dahi Vadas are lentil dumplings topped with a spicy savory yogurt and tamarind chutney. These are great as a side dish for a formal dinner or served as a chaat. Dahi vadad are made using wash urad dal or moong dal or with a combination of both dals using different proportions of dal. Dahi Vada, Dahi Bhalla or Dahi Bara are fried lentil dumplings, topped with curd, variety of chutney and spices.

Dahi Vada step by step

  1. Wash and soak urad dal in water for 6-7 hours..
  2. Drain and place it in a grinder. Grind it to a smooth paste/batter and transfer it to a bowl..
  3. Add in ginger, green chilli, salt and hing. Mix well and beat the batter until it turns light..
  4. Heat oil in a deep pan. Take a lemon sized portion of batter in between your fingers and gently drop it into the oil. Drop 4-5 portions at a time. Deep-fry them on medium heat until golden brown and crisp. Remove and put them into a bowl of luke-warm water. Similarly, finish making vadas with rest of the batter..
  5. Let the deep-fried vadas soak for about 8-10 minutes. Take them out and squeeze between your palms to drain out water. Transfer them to a plate..
  6. Take curd in a bowl. Add in sugar and salt and beat it properly until smooth. Keep it aside..
  7. Heat 1 tsp oil in a tempering pan and add cumin seeds. When they splutter add dry chilli and then curry leaves. Saute for few seconds and turn off the flame. Let the tempering cool down. Then add it to the curd in bowl..
  8. Now soak the vadas in this curd and sprinkle red chilli powder & roasted cumin powder over it..
  9. Serve Dahi Vadas garnished with sev and mint leaves..
