Ingredients of Methi Aloo ki bhaji

  1. Prepare 4 cups of tightly packed methi leaves chopped.
  2. Prepare 4 of small potatoes peel and small size cut.
  3. Prepare 1 tbsp of groundnut.
  4. It's 1 tbsp of chilli powder.
  5. Prepare 1 tbsp of haldi power.

  1. Firstly remove the leaves from the stems of the methi. Then rinse the leaves thoroughly in running water..
  2. Now chop the fenugreek leaves. Then rinse, peel and chop the potatoes into small cubes or squares..
  3. In a kadhai, heat up the oil. add the groundnut, chilli, potatoes first. saute the potatoes for some minutes till they start looking crisp and are lightly browned from the edges.add the asafoetida and chopped tomatoes stir it.add red chilli powder and haldi.and mix well..
  4. Now add the chopped meth stir very well.add salt. give a nice stir and let the methi leaves cook on a medium flame uncovered. the methi will start to leave water. lower the flame and cook the leaves for 5-6 minutes more..
  5. Once all the water has dried up. Some oil should release from the sabzi. There should be no moisture in this dish..
  6. When the aloo methi is done, add some more butter and mix it with the veggies. serve the aloo methi ki sabzi with parathas, rotis or rice-dal..

In this methi bhaji or methi ki sabji I have used slightly large leaves which is a better option to make this sabzi. I have made this recipe using onions My family likes to eat methi not in plain form but prefer to eat when mixed along with various other veggies like aloo and I have already shared aloo. methi ni bhaji is that it hardly takes minutes to prepare and to cook. unlike the other vegetables like potatoes or eggplant, you need to dice them and also boiling point is higher. so eventually it adds up to your cooking time to prepare. in addition, leafy veggies are less dry compared to other traditional dry.
