Potatoes and fenugreek leaves are a lovely combination together. At home, I make aloo methi two ways. One is this Punjabi recipe and the other is my mom's version of Methi aloo with garlic and onions. You can have Aloo Methi using 9 ingredients and 8 steps. Here is how you achieve it.

Ingredients of Aloo Methi

  1. It's 1/2 kg of fenugreek leaves (methi).
  2. You need 2 of cubed potatoes.
  3. It's 1 of chopped tomatoes.
  4. It's 1/2 tsp of Turmeric Powder.
  5. You need 3/4 tsp of Red Chilli powder 1 tsp Mango Powder.
  6. It's to taste of salt.
  7. It's 2 of Green Chillies.
  8. You need 3 tsp of Cooking oil.
  9. You need 1 tsp of Cumin seeds.

This aloo methi recipe has a lot of flavor and bitterness of methi (fenugreek) leaves combined with the earthy flavor and taste of potatoes. It is less spiced and a dry vegetable sabzi. Aloo Methi instructions

  1. All ingredients & veggies..
  2. Fresh fenugreek leaves..
  3. Remove the hard stem of fenugreek,use only the leaves and tender stems. Wash them well with water and then chop finely..
  4. Heat oil in a karahi and add cumin seeds,when seed start crackling add chopped green chilies.saute for few seconds..
  5. Add turmeric, chopped potatoes and salt,mix well and cover and cook on low heat flame till it is half cooked..
  6. Now add chopped fenugreek and tomatoes.mix well,cover and cook on low flame..
  7. When almost done,add chilli powder and mango powder,mix well..
  8. Cover and simmer for a minute. Serve hot with chapati..

Serving suggestion: This aloo methi sabzi is dry dish, so best served with roti (phulka). But you can serve with paratha too. To complete the meal, also have dal-rice on side.
