Ingredients of Aloo-matar-methi paratha
- Prepare 4-5 of Potatoes (boiled).
- Prepare 1/2 cup of peas (boiled).
- It's handful of fresh Coriander chopped.
- It's 1 cup of fenugreek (chopped).
- Prepare 2 of green chillies finely chopped.
- You need 1 inch of ginger grated.
- Prepare 4-5 of garlic cloves (finely chopped / ground).
- It's to taste of Salt.
- You need 1 tsp of red chilli powder or as per taste.
- Prepare 1/2 tsp of mustard seeds.
- You need 1/2 tsp of cumin seeds.
- It's 1/2 tsp of turmeric powder.
- Prepare 1 tsp of fennel seeds.
- You need 1 tsp of oil.
- You need of For Dough-.
- You need 2 cups of wheat flour.
- It's 2-3 tbsp of oil.
- Prepare As needed of Salt.
- Prepare As required of water to knead dough.
- You need As required of Ghee / oil as per need for roasting.
Methi Paratha is popular breakfast in north India during winters. Aloo methi (potatoes with fenugreek leaves) is pretty common but my favorite way to enjoy methi is these parathas. I made them the other day and realized that these are actually one of my favorite parathas and I should make them. Methi Aloo Paratha- Indian flat bread stuffed with mashed potato, fresh fenugreek leaves herbs and few spices.
Aloo-matar-methi paratha step by step
- Put boiled potatoes, peas, fenugreek, coriander, green chillies, salt, red chilli powder, turmeric powder and fennel in a mixing bowl or plate and mix them all well..
- Now heat oil in a pan, add mustard seeds and cumin and let it crackle, after that add garlic and ginger and cook/stir for few seconds, add the prepared potato masala mixture, and mix well and turn off the heat. Remove the mixture in a plate and keep it to cool..
- For making dough - Mix flour, oil and salt in a bowl and make a semi stiff dough using water. Cover the dough and keep it to set for 10 to 15 minutes..
- Now knead the dough again to make it soft. Take a portion from dough, dust with flour, roll it lightly and place prepared stuffing in centre, close it well with light hands, roll the paratha gently and place on hot tawa to roast from both sides.apply ghee or oil while roasting. Prepare all the paranthas in the same way..
- Serve this hot tempting paratha with curd / pickle..
Methi Aloo paratha is a popular bread from Punjab. It can be served as a breakfast/ lunch or dinner ,taste great any time. During winter every one loves to have stuff parathas for breakfast. Very good however there was a little too much paprika for my taste. After cutting down on that this is a very good way to make to Aloo Matar.
