- Prepare of Khade Masale.
- You need 1 Tea Spoon of Khada Dhaniya/ Coriander Seeds.
- It's 1 Tea Spoon of Saunf.
- It's 1 Tea Spoon of Jeera.
- It's 2 of Choti Elaichi.
- Prepare 1 of Small Daal Chinni.

Shahi Kashmiri Dum Aloo step by step
- Chop Green Chillies very-very finely & grind tomato finely into purée in a mixer grinder..
- Grind Kaju pieces finely into powder in a mixer grinder..
- Pierce all aloo pieces with the help of a fork or toothpick so that they absorb gravy properly..
- Now take a kadhai, add 1/2 Big Spoon Mustard oil in it & keep the gas on high flame to burn the oil first..
- When smoke starts coming out of Kadhai, turn off the flame & let the oil cool down a bit..
- After some time again turn on the gas & keep it on medium flame..
- Then add Khade masale in it & let them sizzle..
- When they start sizzling, add spices finely chopped green chillies, powdered Kaju in it & roast them in oil for 1 minute..
- After 1 minute, add spices mix in it & roast them for 2 minutes..
- After 2 minutes, add finely grinded tomato purée in it with 1 Tea Spoon Salt so that they start releasing oil quickly..
- After 4-5 minutes, lower the flame & add 1 Cup Dahi in it & cook them for 2-3 minutes,.
- After 2-3 minutes, add boiled aloo pieces in it with some water & mix them properly..
- Now cover the lid & cook them for 10-15 minutes.
- After 10-15 minutes, Open the lid & add 1 Tea Spoon Garam Masala in it & mix them properly..
- Your Shahi Kashmiri Dum Aloo is ready to be served..
