Ingredients of Dum Aloo

  1. Prepare 20-25 of baby potato (boiled).
  2. You need 3/4 cup of curd.
  3. Prepare 2 medium of onion chopped.
  4. It's 1 tsp of ginger paste.
  5. Prepare 1 tsp of garlic paste.
  6. Prepare 2 tbsp of Coriander seeds.
  7. It's 1 tsp of fennel seeds.
  8. Prepare 1 tsp+1/2 tsp of cumin seeds.
  9. You need 1 of bay leaf.
  10. It's 2 of green cardamom.
  11. Prepare 1 inch of cinnamon stick.
  12. Prepare 1 of cloves.
  13. It's 2 tbsp of roasted peanuts.
  14. It's 1 pinch of asafoetida.
  15. It's 1 tsp of red chilli powder.
  16. You need 1/4 tsp of turmeric powder.
  17. You need 1 tsp of kasuri methi.
  18. It's 4 tbsp of oil.
  19. It's as per taste of Salt.
  20. It's as required of Water.

The baby potatoes are first deep fried, then cooked slowly at low flame in a gravy with spices. Aloo Dum is an exotic delicious main dish. Just the smell of aloo dum can make you hungry! To make this dish, potatoes are fried and then soaked in the spicy aromatic gravy.

Dum Aloo instructions

  1. First, take Coriander seeds, clove, cinnamon, fennel seeds, 1 tsp cumin seeds, and peanuts.put in a grinder jar and grind together and make a fine powder. Keep aside.
  2. In a kadhai, add oil heat it add boiled potatoes and fry them on medium flame untill they turn golden brown. Transfer in a plate..

In the same oil add asafoetida, cumin seeds and bay leaf saute few seconds add chopped onion saute and cooked until they turn golden brown add ginger garlic paste saute.add grind masala mix well and cook for 2 minutes. Then turn the flame low add curd and mix.add turmeric and chili powder mix well. cover and cook for 2-3 minutes. when masala releases the oil add fry potatoes, Kasuri methi, and salt mix together.add one cup water cover and cook for 8-10 minutes on medium flame.Turn off the flame..
