Ingredients of Aloo-matar-methi paratha
- It's 4-5 of Potatoes (boiled).
- Prepare 1/2 cup of peas (boiled).
- It's handful of fresh Coriander chopped.
- You need 1 cup of fenugreek (chopped).
- Prepare 2 of green chillies finely chopped.
- It's 1 inch of ginger grated.
- It's 4-5 of garlic cloves (finely chopped / ground).
- Prepare to taste of Salt.
- You need 1 tsp of red chilli powder or as per taste.
- It's 1/2 tsp of mustard seeds.
- You need 1/2 tsp of cumin seeds.
- You need 1/2 tsp of turmeric powder.
- Prepare 1 tsp of fennel seeds.
- You need 1 tsp of oil.
- It's of For Dough-.
- It's 2 cups of wheat flour.
- It's 2-3 tbsp of oil.
- You need As needed of Salt.

Today I am sharing very tasy recipe of aloo,matar,methi means potato,greenpeas and fenugreek leaves paratha. Recipe is little bit differnet but realy yummy so try it. Aloo methi recipe - a dry vegetable dish aka sabzi made with potatoes and fenugreek leaves. This sabzi goes well with roti or paratha.
Aloo-matar-methi paratha step by step
- Put boiled potatoes, peas, fenugreek, coriander, green chillies, salt, red chilli powder, turmeric powder and fennel in a mixing bowl or plate and mix them all well..
- Now heat oil in a pan, add mustard seeds and cumin and let it crackle, after that add garlic and ginger and cook/stir for few seconds, add the prepared potato masala mixture, and mix well and turn off the heat. Remove the mixture in a plate and keep it to cool..
- For making dough - Mix flour, oil and salt in a bowl and make a semi stiff dough using water. Cover the dough and keep it to set for 10 to 15 minutes..
- Now knead the dough again to make it soft. Take a portion from dough, dust with flour, roll it lightly and place prepared stuffing in centre, close it well with light hands, roll the paratha gently and place on hot tawa to roast from both sides.apply ghee or oil while roasting. Prepare all the paranthas in the same way..
- Serve this hot tempting paratha with curd / pickle..

Methi Aloo Mattar is a three way combination of methi, potatoes and green peas. Fenugreek leaves are called methi in hindi and potatoes known as aloo. It is less spiced and a dry vegetable sabzi.
