Karare Aloo Methi. Hence, last weekend, we duo decided to try out something different, and from my mom's quaint book of recipes, I picked up the idea of preparing Karare Aloo. Karare Aloo was my childhood favorite. Crisp pieces of potato wedges fried to perfection and tossed with yummy masala made from chili powder, amchoor powder, served with coriander.
Ingredients of Karare Aloo Methi
- It's 3-4 of medium size potatoes cut in cubes.
- It's 250 gms of Methi leaves washed and cut evenly.
- You need 2 tsp of mustard oil.
- Prepare 1/2 tsp of asafoetida.
- Prepare 1 tsp of jeera.
- Prepare 5-6 of green chillies washed and cut vertically.
- It's of Salt to taste(the leaves contain salt already and they become very little when cooked, so take care of the quantity).
- You need of U can also add turmeric powder if u wish.
This is a super wholesome sabzi cum accompaniment that imbibes the best of the nutrients derived from the mix of carrots, fenugreek, and spices. Variations for aloo paratha stuffing: The simple and quick stuffing version where boiled potatoes are mashed and added few spices. That's it, the stuffing is ready. Add a teaspoon of anardana powder, it tastes too good.
Karare Aloo Methi step by step
- Add oil in a pan on medium heat. As the oil gets warm Add asafoetida, jeera, sliced chillies and cubed potatoes to it. Sprinkle some salt just for the potatoes..
- Let them roast on medium flame until the potatoes are cooked and crisp..
- Add Methi leaves, add salt according to the leaves. Mix well and cover it for 5-10 min. As the leaves cook very fast, it doesn’t takes much time to get ready..
- Serve hot with parathas in the morning and believe me it’s one delight, nobody wants to miss during winters...
