Aalu methi. Potatoes and fenugreek leaves are a lovely combination together. At home, I make aloo methi two ways. One is this Punjabi recipe and the other is my mom's version of Methi aloo with garlic and onions.
Ingredients of Aalu methi
- You need 2 of medium or 1 ½ cups Potatoes.

- It's 1 cup of Onion.
- It's of finely chopped.
- Prepare 1 teaspoon of Ginger paste or freshly grated or crushed.
- You need 1 teaspoon of Garlic paste or freshly grated.
- It's 1/2 teaspoon of Turmeric powder.
- It's 1 1/2 teaspoon of Red chilli powder.
- It's to taste of Salt.
- Prepare 1 teaspoon of Lemon juice.
Potato is a versatile ingredient that is used to make a lot of dishes. In Indian cuisine we use them to make snacks like. Aloo Methi is a dry curry made with potatoes & fenugreek leaves. It is flavored with mild Indian spices.
Aalu methi step by step
- Heat the oil in a pan on medium heat. Once hot add cumin seeds, let them sizzle..
- Add dried red chilli and saute for a minute..
- Mix in the onions. Sprinkle some salt and cook them till they are translucent and soft..
- Then add ginger paste and garlic paste. Mix and cook for a minute..
- Add potatoes, turmeric powder, red chilli powder and remaining salt..
- Mix well, cover the pan and cook the potatoes..
- Cook them till potatoes are soft and 80% cooked. Do stir in between to make sure that it is not sticking to the bottom of the pan..
- Add chopped methi leaves. Mix well and again cover and cook..
- Now cook till potatoes are cooked all the way through..
- Finally squeeze some fresh lemon juice..
- Mix well and turn off the stove..
Aloo Methi is quick and easy to cook and is a great comfort food. Cooking the slightly bitter Fenugreek Leaves along with the potatoes imparts a distinct flavor to the dish.
