Punjabi Kadhi Pakoda. Punjabi Kadhi Pakora is one of the most popular North Indian dishes! Deep fried fritters (pakora) are dunked in a yogurt based curry made with besan (gram flour) and spices! Kadhi pakora is often made at our home, but I just could not manage myself to take step by step photos and thats why it took me so long to share this delicious Punjabi kadhi.
Ingredients of Punjabi Kadhi Pakoda
- Prepare 200 g of sour yoghurt.
- It's 3 tbsp of gram flour.
- It's 1/2 tsp of ginger garlic paste.
- It's 1 tsp of red chilli powder.
- You need 1 tsp of turmeric powder.
- Prepare to taste of Salt.
- It's 1 pinch of asafoetida.
- You need 1 tsp of cumin seeds.
- Prepare 1 tsp of whole Coriander seeds crushed.
- You need 2-3 of whole dried red chillies.
- It's 1/2 tsp of fenugreek seeds.
- You need 1 of onion sliced.
- It's Handful of coriander leaves.
- Prepare 2 glasses of water.
- You need 2 tbsp of oil.
- You need of Pakodas.
- You need 1 of onion finely chopped.
- You need 1 cup of gram flour.
- You need 1/2 tsp of turmeric powder.
- Prepare 1 tsp of red chilli powder.
- Prepare 1 of green chilli finely chopped.
- It's Handful of coriander leaves.
- It's to taste of Salt.
- You need 1 pinch of baking soda.
- Prepare 1/2 cup of water.
- It's as required of Oil to fry pakodas.
The first time I made kadhi pakora from the cookbook The Dhabas Of Amritsar and it was fabulous. Punjabi Kadhi Pakoda instructions
- Making pakodas : In a bowl, take chopped onion, green chilli, red chilli powder, turmeric powder,salt, coriander leaves. Mix everything.
- Add gram flour, give it a mix and add water, make batter and lastly add baking soda. Give a final mix. (Keep batter consistency thick).
- Heat oil in a pan, take spoon full of batter made in above step and deep fry on a medium flame. Remove it on a paper napkin once they are golden in colour.(can do couple of spoons in one go)..
- Repeat the process with the remaining batter..
- Kadhi : In a bowl take yoghurt, add gram flour, ginger garlic paste, red chilli powder, turmeric powder, whisk and add water. Give a mix and keep it aside..
- In a new pan add oil, once it is hot, add cummin seeds, asafoetida, coriander seeds, and whole dried red chillies and fenugreek seeds. Stir on the low flame for 1 min..
- Add sliced onion and cook for another 4-5 mins..
- Once the onion is transulant add the yoghurt mix made in step 5. Give a good stir. Add salt as per taste..
- Let the above kadhi cook for 20-30 mins. Keep stirring in between so that it should not stick to the bottom..
- Lastly add coriander leaves and the pakodas made in step 3 & 4. (Add pakodas only when you are ready to eat)..
- Serve hot with rice..
