  1. You need 1/2 kg of gram flour.
  2. You need 500 ml of Curd or Punjabi lassi.
  3. Prepare 3-4 of Onions.
  4. Prepare 1/2 inch of Ginger chopped or paste.
  5. It's 2-3 of Green chilli finely chopped.
  6. Prepare 1 string of Curry leaves (10-12).
  7. You need 2-3 tbsp of Turmerind pulp.
  8. Prepare 1/4 tbsp of Coriander seeds.
  9. It's 1/4 tbsp of Cumin seeds.
  10. Prepare 1 pinch of Asafoetida.
  11. It's 1/4 tbsp of Fenugreek seeds.
  12. You need 1/4 tsp of Mustard seeds.
  13. It's 2 of Dry red chilli.
  14. It's 1 tsp of Red chilli powder.
  15. Prepare to taste of Salt.
  16. Prepare 1/4 tsp of Black pepper freshly crushed.
  17. You need 2 cups of Mustard oil.

Now add water and make a thin consistency and stir well so that there are no lumps and curd and gram flour incorporates well. Now heat oil/ghee in a pan. Add asafoetida, cumin seeds, mustard seeds, fenugreek seeds and red chillies and let them splutter. This is a tantalizingly sour dahi kadhi prepared with besan, curd and delicious besan pakora.

Punjabi kadhi festive instructions

  1. First of all heat mustard oil in a pan and put a pinch of asafoetida, fenugreek seeds, splatter mustard seeds, coriander seeds and cumin..Add roughly chopped onion and saute then ginger, green chilli paste and saute till the onion, ginger get golden colour.
  2. Mix 2-3tbsp of gram flour in curd or lassi and blend in a mixture blender.. Pour a cup of water in it.
  3. Add the diluted mixture in to the fried ginger, onion and spices mixture.. Add redchilli powder, black pepper powder and turmeric in it and stir continously till get a boil..add salt and stir.. Add turmerind water and stir..Slow down the flame.
  4. On other side of gas heat mustard oil and make a semi pouring batter by mixing rest of the gram flour, salt, red pepper, chopped green chilli, roughly chopped onions and water in it.
  5. Make small small pakoras by taking the batter on yo'r finger tips and put in hot oil..fry all the pakoras in batches till golden brown..put out the pakoras from oil and spread on a paper towel.
  6. Cook the kadhi for about 30minutes while sttiring..check the consistency of kadhi and mix water or blended curd if required.
  7. Add pakoras in kadhi and let it simmer some more on very slow flame to combine the pakoras with kadhi.
  8. Tadka fo' kadhi_Heat one spoon of desi ghee in a tadka pan and add dry red chilli and roast fo' 30 seconds and add red chilli powder and flame off..put the kadhi in a serving bowl and pour hot tadka quickly over the kadhi.
  9. Yo'r Punjabi kadhi specially prepared for' "Baisakhi" is ready.
  10. Serve hot with rice or chapatti.. "Super heat" punjab's "kadhi".
