Tandoori Bhindi/ Okra Masala. Bhindi Masala - Indian style okra stir fry cooked with onion, tomatoes and spices! Okra or bhindi as it's called in Hindi is a very popular vegetable in India. Ingredients of Tandoori Bhindi/ Okra Masala
- You need 300 gms of bhindi.
- You need 1 of onion chopped finely.
- It's 1 tsp of ginger garlic paste.
- It's 1 tbsp of tomato puree.
- You need 1 tbsp of curd.
- You need 1 tsp of fresh cream or malai.
- It's 1 tsp of kasoori methi /dry fenugreek leaves.
- You need 1 tbsp of charmagaz / melon seeds.
- Prepare 1 tsp of tandoori masala.
- Prepare 3 tbsp of oil.
- Prepare 1 pinch of hing/asafoetida.
- It's 1 pinch of orange red food colour (optional).
- It's To taste of salt and sugar.
- You need 1 tsp of chaat masala.
- Prepare 1/4 tsp of red chilli powder.
- You need 1/4 tsp of red chilli powder.
- Prepare 1/4 tsp of garam masala.
- Prepare 1/4 tsp of cumin seeds.
- It's 1/4 tsp of ajwain/carom seeds.
- It's 4-5 tbsp of refined oil.

Tandoori Bhindi/ Okra Masala instructions
- Wash and pat dry bhindi /lady's finger/okra.Chop both ends and cut into 1- 1.5 inches.Heat oil in a wok and fry bhindi till semi soft.Set aside.Make a paste of charmagaz /melon seeds, fresh cream,ginger garlic paste,tomato puree and curd.Heat 1 tbsp oil and fry the onion golden brown.Set aside.Sprinkle cumin and ajwain / carom seeds and fry the ground masala. A pinch of food colour may be added.Add tandoori masala,kasoori methi, chaat masala, red chilli powder,garam masala,salt and sugar..
- Add bhindi and fried onion.Sprinkle little water and toss.Transfer to a microsafe bowl and microwave high power 2 minutes so that masala coats bhindi and oil leaves sides.Serve with tandoori naan or roti or jeera rice..
