- Prepare 10 of Ladies Finger.
- You need 2 of Onions.
- Prepare 2 of Tomatoes.
- Prepare 6 of Green Chillies.
- You need 7 cloves of Garlic.
- It's 2 Sprigs of Coriander Leaves.
- It's 1/2 Teaspoon of Red chilli powder.
- It's 1 Teaspoon of Garam masala powder.
- It's 1/4 Teaspoon of Turmeric powder.
- You need 2 Teaspoons of Coriander powder.

This is an easy recipe and can be packed for your Lunch Box along with a Tawa Paratha. In this aloo bhindi both bhindi (okra) & potatoes (aloo) are to be sauteed or fried in oil. - Cut the tips of the ladies fingers and make a single cut in the middle to get long pieces of ladies finger..
- Peel potatoes and cut them into circles..
- To prepare the paste for the gravy: Chop onions, tomatoes and green chilies into small pieces. Peel the garlic cloves and cut them into small pieces. Grind chopped onions, tomatoes, green chilies, garlic cloves and coriander leaves together into a smooth paste..
- Take 2 tablespoons of oil in a wide shallow pan. Fry the ladies finger in the little oil by sauteing at regular intervals. When cooked, put the ladies finger in a tissue paper so that the oil is absorbed..
- Fry the potatoes in the same oil and cook till it is golden brown in color and keep it aside..
- Saute the cumin seeds in the same pan. Add the paste to it. To it, add red chili powder, garam masala, turmeric powder, coriander powder and salt and mix well. Fry in low flame for 2-3 minutes..
- Add the fried ladies fingers and potatoes to the gravy and mix well till the vegetables are immersed in the gravy. Add 1/2 cup of water to it and boil in medium flame for 3 minutes..
- Garnish with coriander leaves(optional).
